My 27th birthday cake… a Terry’s chocolate orange extravaganza! 

Its my birthday!

So, today is my 27th birthday! This blog post is scheduled, and was a bit of a last minute addition to my schedule, so don’t worry… I’m not working on my birthday! I made this cake a couple days ago and edited the photos and post quickly! 

I decided this year to go for a Terry’s chocolate orange themed cake, as why would I not! I was going to go for a birthday of a blowout chocolate cake again like my 25th Birthday Cake, but I changed my mind halfway through! 

Sponge

The cake itself is basically the same as my Terry’s chocolate orange cake! The only difference is that I made the cake to be four sponges rather than three (500g mix, with 10 medium eggs), and I used a ganache for the outside! 

Ganache

For the ganache, I did a milk Terry’s chocolate orange ganache, which is a ratio of 2:1 chocolate:cream. The instructions and ideas are the same as my biscoff drip cake, so follow that for a method!

The Terry’s ganache is the same as a regular milk chocolate ganache, but I find it can melt and be reasonably thin, so you have to wait a bit longer! Alternatively, if you want to speed up the process slightly, you can whip the ganache up after chilling it for a while, and it makes it a lovely mousse texture to work with, but still sets just as hard! As this was such a lovely texture, I also used it to pipe the swirls on top! 

Decoration

For the decoration, I used some gorgeous sprinkles from Iced Jems, as you all know I adore them. The smaller bronze, ruby and gold sprinkles are cute and easier to use more of them, and then I added on a few of the larger bronze, ruby and gold sprinkles to give more of a dimension! 

I also used my favourite bronze crunch sprinkles from Waitrose that I have used on probably half the bakes on this blog… my bad… and then also some Terry’s segments! It probably is a bit of an understated birthday cake in comparison to other cakes I’ve had… but I love it!

Finishing touches

The Happy Birthday cake topper definitely does finish the cake off, and I just love it. The rose gold cake board was also a must, as I just love rose gold. I realise I have said that a few times now, but I love this cake!     did you use the same amount of ganache and buttercream like in biscoff cake recipe? I’m making this cake tomorrow and just wonder how much I need to buy, thank you

      The amount is more similar to my 28th birthday cake post from the other day, but the biscoff one should be fine!

    Hi Jane! Lovey cake, so delicious as always! I made this a week or so ago and had to cover it in buttercream because the ganache came out a really dark colour? I’m sure I used the same method as the biscoff cake as you’ve stated but with Terry’s choc…do you know some reasons why this would happen? I must not of used enough cream as I assume this is what makes the ganache lovely and light in colour?

      Photos and your kitchen environment aren’t necessarily the best comparison because of how photos are edited and lighting, but the colour really doesn’t matter as long as the ganache has worked. What type of chocolate did you use because the Biscoff ganache is for white chocolate and ratios are different for different types of chocolate x

      I’ve just made the ganache and it’s really dark just 2:1 Terry’s choc orange: to double cream (300g to 150g)
      I’m going to whip it and see if it lightens/changed colour a bit as I was going to do a milk chocolate drip but won’t bother if the colours too similar (no dark choc in)

    Hi Jane, I LOVE your site and have made so many of your recipes so excited to try this one. I got confused when getting ingredients and stupidly got white choc instead of enough choc orange for the ganache (looked at the biscotti recipe). Would a mix of milk and dark choc orange work? If i did 2 milk and 1 dark, how much cream would.i need? I get so confused with quantities and I am making it for my dad’s bday so want it to be right. Thanks!

      Yes it would! So 300g milk, 150g dark, with 300ml cream! x

    Can you use the buttercream for the outside or does it have to be ganache? If so how do you make it I can only see how to make the drip ganache. I’m terribly confused sorry! 😂

    This might be a silly question, but for the icing, did you use buttercream and ganache? I understand that the drips are ganache, but not sure if you used it for the lighter brown icing too. Going by the biscoff recipe you used buttercream icing followed by ganache but the mini egg one was just buttercream. Would it make a difference or can you do it either way? Hope that all makes sense! Absolutely love your cakes! x

    Hi Jane! We made this yesterday for my nan’s birthday and it was just heavenly – rave reviews all around! She was so impressed by it even though my mum’s piping skills aren’t quite top-notch yet!     Quick question what did you use for the drip? Did you melt dark chocolate?

    Also you crumb coat the cake with buttercream and then cover it with ganache?

      Hey! I used the same drip as on my Mini Egg Drip Cake – and yes, crumb coated in buttercream! x
