Easy and delicious cakes in the viral mini loaf tins – so easy to make and such a cute baking idea!

Mini loaf tins

So these tins have gone viral in the baking world, and I just can’t keep up with them… honestly, they are everywhere! Like the bronuts, I thought it was about time that I gave them a go to give the rest of you a chance to try them as well.

I, obviously, didn’t invent this idea but they are so fun and I really wanted to give them a go as much as possible. They look cute, they’re great for mini gifts and you can have so much fun.

There are a variety of them to buy online, but these are the exact ones I used for the bakes in the photos – but here is another set that I tried as well when testing out recipes.

I do re-use my tins after they have had a bake in them – I wash them out and use again or use them for storage or sprinkles, piping tips, etc – try not to throw them away after one use! 

Cake recipes

For the main recipe for this post, I went for a vanilla cake as I wanted to show the basics of a cake sponge, and how much it takes to fill a certain amount of mini cake tins.

For 12 mini cake tins I used a 5 egg recipe with 275g butter, sugar, self raising flour, 5 eggs and 1 tsp vanilla extract mixed together and split between the 12 mini tins. I found putting 80-85g of cake mix was ideal for these tins.

When baking these you don’t want to overfill them as you need to be able to fit the decoration on top of the cake and under the lid of the case so the 80-85g is perfect. Some little tins may vary, but this has worked well so far.

I also made some using my chocolate fudge cupcake recipe and found the batch of 12 cupcakes made 8 mini cake tins perfectly – so this may help if you want to convert a cupcake recipe to these tins.

Cheesecake Recipes

The good thing about all of these mini cake tins is that you can basically put whatever you want in them as they are oven safe, but also they can be used for delicious things such as cheesecakes.

I decided to try out my no-bake Rolo cheesecake in the tins, and using half of the cheesecake recipe made 6 Rolo cheesecakes and it was perfect. I split the biscuit base between the 6 mini tins, and then piped the cheesecake mixture on top.

I put the Rolos on top of the cheesecake mix, instead of mixing into the cheesecake mix as I nearly forgot to put them in, but after they’d set I decorate with some swirls of sweetened cream and extra Rolos like always, and they looked great.

Traybake Recipes

Another delicious example I tried was brownies – I tried my triple chocolate brownie recipe and oh wow they were absolutely delicious. They baked so well into the tray, and then I decorated with a drizzle of some extra chocolate and some decoration.

I found that half of the brownie recipe made six brownies, so the full brownie recipe would make 10-12. You can afford to fill the brownie tins slightly more as they don’t rise much, and the decoration is a lot less compared to a cake.

Decoration

I used a standard decoration of an American buttercream frosting, because it’s so easy to make and again these are based on a basic vanilla cake/cupcake recipe. You can of course decorate them with whatever you fancy.

I used my favourite 2d closed star piping tip to decorate all of these beautiful mini cake tin bakes, but it worked well. I did some swirls, some stars, and decorated with a variety of sprinkles and it worked wonders.

Ingredients

Cake mixture

  • 275 g unsalted butter (or baking spread)
  • 275 g caster sugar
  • 5 medium eggs
  • 275 g self raising flour
  • 1 tsp vanilla extract

Decoration

  • 250 g unsalted butter (room temp)
  • 500 g icing sugar
  • 1 tsp vanilla extract
  • sprinkles

Instructions

  • Preheat the oven to 180ºc/160ºc fan and prep 12 of the mini cake tins onto large trays. I put 6 per tray. 
  • Add the butter and sugar to a bowl and mix together until creamy
  • Add the eggs, flour and vanilla and mix together again until thick
  • Add the mixture to a piping bag (or you can use spoons) and add 80-85g of mix to each mini cake tin. I put each mini cake tin onto my scales so it was accurate 
  • Bake the mini cake tins in the oven for 20+ minutes until baked
  • Once baked, remove the trays from the oven and leave to cool on the side fully
  • Add the room temperature butter to a bowl, and beat until smooth
  • Add the icing sugar and vanilla extract and beat again for 5 minutes or so until light and fluffy
  • Add to a piping bag with your chosen piping tip and then decorate the cupcakes with the frosting
  • Add sprinkles to decorate and enjoy.

    Always loving the recipes. Has anyone else ordered the second tins on the recommendations and had the first five or so completely dented on the sides? I only ordered those ones due to Amazon Prime next day delivery. Have messaged the company selling but no reply. Apart from that these go down a treat no matter what cake I bake in them from Jane’s collection 👨‍🍳

    Hi! If you frost them and then freeze, how do you defrost them? I don’t want them to get soggy, but I have a large order and I need to bake ahead. Do I keep them wrapped until defrosted to prevent condensation, and can I defrost on the counter rather than the refrigerator? Thank you!

    Hi Jane! Your tin cakes look amazing. Would love to try them for the first time. Im planning on a pop up at an event. I might have to bake a big batch of these tins. Do you think i can bake them a week ahead and freeze , frost the day befo event? If yes, whats the process for freezing?

    How far in advance can a mini loaf pan cake be baked and decorated??

      Hi Jane, I had a go at baking these lovely cakes but they stuck to the tin (not same supplier as yours). Would you advise greasing or use flour inside the tins?

    Firstly I love your recipes.
    Would it be possible to do your old school cake as mini loaf cakes. If so are the measurments the same or do I have to alter them? Also how many would it make?. And what is the baking time? X
